Apple cake is definitively one of my favourites! To make a great italian apple cake it’s super easy. Get 4 apples, 180 grams of 00 flour, 50 grams of butter, 170 grams of sugar, 16 grams of yeast, 200 ml of semi-skimmed milk, 4 eggs, 1 lemon zest grated. You need a pan for cakes, 30 cm diameter. The width determines how long you will need to cook it for. The larger the pan, the thinner the cake will be, the shorter the time to cook it will be. The super super easy and quick way to prepare it is. Use a food processor with plastik movers. Put on the oven 180° celsius. Put 4 eggs and the 170 grams sugar in it. Make it go for a while to melt the sugar and the eggs. Add 50grams of melted butter. You can melt it in the microwave. Put it in a cup and microwave it for 30 secs medium power. Process it for a few seconds. Add half of the flour. Possibly add it little by little with a tea spoon while the food processor is processing. Add half of the milk. (I heat up the milk a little in the microwave so it’s not cold). Process it for 30 seconds. Add the rest of the flour and the rest of the milk. Add the lemon zest. Process for a few seconds. Cut the apples. The cutting technique is really important to make this part quick: cut the top and the bottom, then peal it, then cut in half and then slice it on a chopping board. Repeat for the four apples and put all the thin slices in a bowl. Add the yeast to the mix in the food processor, process for 20 seconds. Remove the lid and add the apple slices. Stir well. Prepare the pan with a layer of baking paper. Spread a bit of butter and add a thin layer of breadcrumbs. This will prevent sticking and burning the cake under. Poor the mix with apples in the pan. Cook for 1 hour 20 minutes. Yeast Pane degli Angeli, is probably the most used yeast in Italy for cakes.
